"I'm afraid I can't let you boil water, Dave"

「湯沸し」(the 2nd bottom from right) is what you want. It means "boil water" and you can do it with the right IH heater. Have a good time!
I actually tried that button, and all that happened was that the stove started making an ominous beeping sound. Concerned that I had triggered the auto-destruct sequence, I turned it off and waited for my mom to wake up, at which point she was able to teach me the correct usage of the HEATER dial.
It's funny the two main functions on the right are "Boiling water" and "Tempura". It's demonstrating that how important Tempura is for Japanese!
Japanese eat tempura everyday so that it's very important (just kidding).

I think the reason why do we Japanese have "deep fry mode", tempura, is to keep the temperature of cooking oil accurately.

well now I know what the dials say! I just pushed the middle one in and turned it on and it boiled water, didn't know there was a special one for that :)
